Pineapple and Ginger Lassi
Lassi is a delicious traditional indian drink, that can be made sweet or savoury. My pineapple and ginger lassi is sweet and has wonderful anti-inflammatory powers! Pineapples contain the proteolytic enzyme bromelain. What does bromelain do? It helps you digest protein, and it reduces inflammation amongst other things. Ginger, also known for its anti-inflammatory properties, joins in the fight and gives this lassi a zing! Be sure to include the core of the pineapple, as that is where the good stuff lives. Enjoy this refreshing summery drink!
Ingredients
1 x 330ml coconut water
250gms coconut cream or nudie coconut yoghurt (even better!)
3 cups of fresh pineapple (chopped) – If not available or out of season; you can use frozen or canned pineapple
A knob of fresh ginger (finely chopped)
1 tsp. of honey (sweeten to taste)
Preparation
Place all ingredients in a blender, process until well blended. Serve immediately.
Makes approx. one litre of lassi. 3 – 4 serves.
