Berry Bircher Muesli
This muesli gives your body an amazing dose of fibre for a healthy digestive system. The perfect way to start the day! Beta-glucan, found in oats has been clinically proven to lower cholesterol by interfering in the absorption of dietary cholesterol, supporting a healthy cardiovascular system. Oats has a low glycemic index (GI), which allows your body to sustain long lasting energy. Good quality natural unsweetened yoghurt is high in calcium, copper, phosphorous, B vitamins, protein, potassium and is a great source of lactobacillus and bifidobacteria cultures for healthy digestion.
Ingredients
- 1-cup oats
- ½ cup plain unsweetened natural yogurt (for diary free use almond milk)
- 2 tbsp. of LSA (linseed, sunflower, almond)
- 1 tbsp. of pumpkin seeds
- 1 tbsp. of sunflower seeds
- 2 tbsp of chia seeds
- 2 tbsp. lemon juice
- 1-cup filtered water
- 1 large grated red apple with the skin
- 1-cup berries (blueberries, raspberries, blackberries)
- 2 tbsp. goji berries
Preparation
Soak oats, LSA, sunflower seeds, pumpkin seeds, goji, in lemon juice, water and yogurt for at least 8 hours or overnight. In the morning, add grated apple, berries and chia seeds and fold through the yogurt – top with extra berries and almonds, brazils or walnuts.
Serves 2. Can be store in the fridge for up to 5 days.
